Dietary Services

"Meals are a focal point of our residents' lives both as daily highlights and as sources of nutrition. They are a key to our success..."

Dietitian and Dietary Manager Paul Winters, R.D., is originally from Palatka, Florida, graduating from Florida State University in 1991 and completed his internship with National Home Care in Tennessee. Paul, along with his wife and two children, make their home in nearby Jupiter, Florida. He likes working out, fishing, scuba diving and being a dad. Paul says he enjoys working with the elderly very much while planning and creating delicious, home-cooked meals for them.

Taste, nutrition, and choice are daily fare at each facility. A constant goal in the preparation of meals is to enhance health as well as enjoyment. All menus are developed and individualized by a Registered Dietitian to ensure they meet each resident's nutritional requirements. Fresh ingredients are always used to insure quality in every meal.

A resident's food preferences are gathered and input into a computerized meal delivery system to make sure everyone receives the items they like and request. Upon admission, a resident has a nutritional assessment completed, which is then used to determine appropriate diet and nutrition interventions for each specific health problem. Residents are reassessed every three months to make sure no new nutrition related problems have occurred.

Residents order from a menu of entrees and a la carte selections prepared by our professional kitchen staff. And of course, family members and guests are always welcome to dine for a small charge.

We also understand that dining involves more than food. It involves creating an experience. It involves friendly, attentive service, impeccably set tables and listening to residents' desires.

We believe in rigorous, ongoing education and training - not just in the art of dining services - but also in understanding the changing needs of people as they grow older. We also believe the best foods must be complemented by strong, careful management controlling expenses so quality dining does not translate into cost increases for our residents.

Residents are encouraged to come to our dining rooms for their meals and they are seated based on personal compatibility and the degree of care needed. This helps promote their mobility as well as social interactions with other people. Quite often, there are special entertainment programs presented during dining hours for their enjoyment and enabling a higher quality of life for them.
